Uh oh! It's barely May & I'm already tired of pre-packaged energy bars and gels.
What are your favorite "real" foods for on-the-bike (racing OR training) ?
Do you have a favorite recipe for home made bars / snacks / etc. that are easy to handle on bike?
(I've developed a tasty one for bars made from dried fruits, seeds, nuts, cocoa & coconut ... the flavor is amazing, but I haven't quite nailed down the right texture for easy handling & storage in jersey pockets.)
Ha! Okay, I'll share the in-progress recipe & even if this doesn't turn into a whole list of favorite recipes, maybe someone can help me evolve the texture of this one so that it's more portable! To answer your question, the recipe came from my imagination ... and too many commercial bars eaten at training camps this year
Super simple, all measurements approximate, mix and match with any dried fruit, seeds, nuts.
I toss everything into a Vitamix blender (a food processor works too, but you might have to add a little juice or water) & process until everything is well combined (don't overprocess....if you do, the oil will separate from the nuts/seeds, which was neither pretty nor tasty)
Press the mixture into a baking pan so mixture is ~1/2"-3/4" thick)
Refrigerate for 30 minutes to overnight
Cut into chunks, and wrap (waxed paper, twisted at the ends; bags, whatever)
